Our Story
In 2011, Tropical Storm Irene swept through southern Vermont and devastated the town of Wilmington. Floodwaters from the Deerfield River surged through the historic village, damaging homes, businesses, and many of the buildings that had long defined the town’s character. In the aftermath, the community faced the enormous task of rebuilding both physically and emotionally. When we came across this property, we saw more than a building that needed restoration. We saw an opportunity to help bring energy and optimism back to the center of town by creating a place where people could once again gather around food, conversation, and community.
This building once housed the Parmalee & Howe Pharmacy, a trusted fixture in Wilmington for generations. As we restored the space, we were committed to honoring that history rather than erasing it. Renée Gallé, one of the owner/operators, approached the design and restoration of the space with a deep appreciation for the town’s past and the building’s original character. Her eye for design can be seen in the thoughtful details throughout the restaurant. When you walk through the front doors today, the mosaic tile floor reads “P & H Building,” a tribute to Parmalee & Howe and the legacy of the pharmacy that once served the town. Throughout the restoration we worked carefully to preserve the spirit of the building while giving it new life as Cask & Kiln Kitchen. While we could not bring back the pharmacy itself, we hoped to create something with a similar purpose, a place where the community could gather, reconnect, and feel proud of Wilmington as it continued its remarkable recovery.
The Next Chapter of Cask & Kiln
Cask & Kiln Kitchen was built with intention and care, not simply as a business, but as a place meant to bring people together in the heart of Wilmington. Like many restaurants across the country, its original momentum was interrupted by the COVID-19 pandemic, a moment that changed the hospitality industry and many people’s life paths. While the restaurant itself paused, the town has continued to come back to life. Tourism has returned, new energy is flowing through the village, and the Deerfield Valley remains one of Vermont’s most vibrant four-season destinations.
Today, Cask & Kiln stands ready for its next chapter. With its fully built kitchen, two distinct dining levels, and thoughtfully restored historic character, the foundation is already in place for you to bring your own vision forward.
